Banana Bread

What's my secret to deliciously moist Banana Bread? Yogurt. This time I used honey flavored Greek yogurt because that's what I had available. But in the past I've jazzed up the banana bread with Piña Colada flavored yogurt. Really you could use any kind of yogurt. Whats your favorite flavor?

Ingredients:

1 cup mashed bananas
1 cup yogurt (I used honey flavored Greek yogurt)
1/4 cup butter or margarine
1 1/3 cups brown sugar
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt

Directions:

1.) Preheat  oven to 350 degrees. Grease one loaf pan.

2.) Combine banana and yogurt. Set aside. In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and banana mixture. Combine the flour, baking soda, baking powder and salt; stir in to the banana mixture. Spread the batter evenly into the prepared pan.

3.) Bake for 50 minutes or until a toothpick inserted into the center of the bread comes out clean.

4.) Allow time for your bread to completely cool before taking it out of the pan.

5.) ENJOY!
