Jewelry Correction

Hello Dear Friends!

I hope y'all are having a FANTASTIC week. I've sure been busy this week and honestly a little grumpy. Who knows why... I guess it just happens sometimes.

I wanted to write a quick post letting you know about an error I made in my post titled Jewelry & Chocolate. I wrote about an awesome bracelet the Cookie Monster got me and some delicious chocolates my parents sent.

In that post I wrote that HorseFeathers Gifts made this bracelet. I was a bit confused though and HorseFeathers is one of the retailers that sells these lovely bracelets. Kellie the founder of Lenny & Eva kindly let me know that they are the makers of the bracelet. Tidbit Tuesday (DIY air freshener)


Today's tidbit is all about keeping it FRESH! Sick of having to buy those chemical laden air fresheners over and over? Or maybe you don't use air fresheners because they are too strong. Thanks to Maggie over at Smashed Peas & Carrots, I've got the perfect solution for you! Make your own air freshener. Since the main ingredient is baking soda, it's more than a freshener it's an odor absorber.

Mango, Chicken & Rice Salad/Wrap


Happy Friday! Today I'm sharing a recipe that a dear friend made for us when we visited her in beautiful West Virginia. I'm envious of the amazing view she has of the Appalachians right from her doorstep.

I used the base ideas of the recipe and changed it up a bit. It's perfectly refreshing and satisfying. Not to mention it's super easy. You can fix the ingredients ahead of time and put them all together when you're ready to eat. Don't be afraid to use ingredients you and your family love. If you don't like Goat Cheese use a cheese you do like. If you don't like Mango try apple. The possibilities are endless. I will say that in the past I've been hesitant of fruit with savory flavors but it really works well together and is delicious.

For my version of the recipe I used no tomatoes because I couldn't find any that were good and fresh. Instead of using rice I used garlic flavored Couscous. I love Couscous! I also whipped up my own balsamic dressing with just vinegar, dried herbs, salt, pepper and some olive oil.

You can prep all the ingredients ahead of time, then place them out on the table buffet style so that your family can add as much or as little as they want. If you want to save some time get a Rotisserie chicken from the store and just shred it up. Otherwise just poach a couple chicken breasts in chicken stock or water with a bay leaf works too.

We decided to make our salad and then wrap it up in a spinach, basil wrap.  It was super yummy! Oh and I only had parsley so I used that for my fresh herb instead of basil.

It was such an easy dish that was ready for us when we were. I prepped all the ingredients and had them waiting for us in the fridge. Then we could pull them out and put everything together. I hope you'll let me know if you try it and what you think. Have an AmAzInG weekend!

Not so Wordless Wednesday

I recently wrote about our adventure on Sunday when we went to a doggy carnival in Lincoln, NE. If you didn't read it yet you should check it out, it might give you a giggle, and there are some SUPER cute pictures of my girl Blanca. On our drive from the Omaha area to Lincoln we noticed an interesting building that appeared to be made of glass with a large cross in front.

The picture above is the view from the interstate. When you drive for miles seeing fields as far as the eye can see this type of thing tends to stand out. Of course we wondered what it was and were very intrigued so we stopped to check it out.

It's called the Holy Family Shrine. Unfortunately right when we pulled up there was a man locking up the premises so we weren't allowed inside. But we were still able to explore the outside of the building and the sitting areas. I honestly don't know much about this place. According to the website, "...Inspiration from the Holy Spirit led the founders of the Shrine to create a place for travelers to seek out the intervention of the Holy Spirit, to be at peace, to heal, to be comforted, to pray, and to discover or re-discover the saving power of Jesus Christ..."



The architecture was breathtaking. Even though we couldn't get inside it was almost as if we were. They put a lot of thought and effort into every detail. Can you see the cutouts in the floor beside the pews? That was so you could experience the water flowing under the floor. Doesn't it look so peaceful?



I did enjoy the overall feel of the Shrine. It brought about thoughts of my Savior and what He's done for me. It was still hard for me to get over where this amazing building was plotted. The surroundings weren't exactly picturesque. I thought it was very interesting. My husband mentioned that it could symbolize that there is life even in the deadest of places. Even though I'm not sure that's what the founders were going for. The picture below is the view from the Shrine, what you would see when you look out from the inside. I suppose that the point is not to be bombarded by outside distractions though. And strangely enough some people find flat farm land that goes on forever pretty in some way. I can't see it...
