Mango, Chicken & Rice Salad/Wrap


Happy Friday! Today I'm sharing a recipe that a dear friend made for us when we visited her in beautiful West Virginia. I'm envious of the amazing view she has of the Appalachians right from her doorstep.

I used the base ideas of the recipe and changed it up a bit. It's perfectly refreshing and satisfying. Not to mention it's super easy. You can fix the ingredients ahead of time and put them all together when you're ready to eat. Don't be afraid to use ingredients you and your family love. If you don't like Goat Cheese use a cheese you do like. If you don't like Mango try apple. The possibilities are endless. I will say that in the past I've been hesitant of fruit with savory flavors but it really works well together and is delicious.

For my version of the recipe I used no tomatoes because I couldn't find any that were good and fresh. Instead of using rice I used garlic flavored Couscous. I love Couscous! I also whipped up my own balsamic dressing with just vinegar, dried herbs, salt, pepper and some olive oil.

You can prep all the ingredients ahead of time, then place them out on the table buffet style so that your family can add as much or as little as they want. If you want to save some time get a Rotisserie chicken from the store and just shred it up. Otherwise just poach a couple chicken breasts in chicken stock or water with a bay leaf works too.

We decided to make our salad and then wrap it up in a spinach, basil wrap.  It was super yummy! Oh and I only had parsley so I used that for my fresh herb instead of basil.

It was such an easy dish that was ready for us when we were. I prepped all the ingredients and had them waiting for us in the fridge. Then we could pull them out and put everything together. I hope you'll let me know if you try it and what you think. Have an AmAzInG weekend!
