Apple Butter Grilled Cheese

It's the beginning of apple picking season around here! Last year we picked the apples pretty late. I made a Skillet Cake like this.

This year we realized we could start picking earlier. We still left many of the apples on to continue to ripen. The goal is to get the apples before all the critters do. The deer especially love the apples. They will jump up on their back legs to reach them. It's very fun to watch.

Our dogs LOVE the apples too. That's one way we could tell they were ready, the dogs were eating them. They won't touch the rotten or unripened ones.

With the apples this year I plan to try making apple butter for the first time. I've fallen in love with a new sandwich. Have you ever had apples and cheese? it's so yummy right? Well I decided to combine apple butter and goat cheese and it's so good.

I recently made my first loaf of homemade, G free bread with the help of Pamela. Have you heard of Pamela's Ultimate Baking Mix? It's awesome, especially for those new to eating gluten free. I use it as an all purpose flour for just about everything. It makes baking G free so easy, there's no mixing a bunch of different flours involved. If you've eaten G free bread before you know it usually tastes better when it's toasted. To make this yummy sandwich I put a little olive oil in a skillet. Place one piece of G free bread in the skillet and crumble goat cheese on top. Then I spread apple butter on another piece of bread and place it on top of the goat cheese. Once one side it toasty I flip it so the other side gets toasty.
You MUST try this!

  1. One of my friends from the old Multiply, which was the best blogging platform I've ever come across, has lots of gluten-free recipes. Luckily she came to Blogger too. I didn't get the recipe for apple butter from her that I use, but did get it from another lady who had a page there. I like fried tart apples and also tart apples in apple crumble. As a matter of fact, the only thing I like better than apple crumble is rhubarb crumble. Sadly I've yet to find rhubarb here.
