Leftover Poppers


I had some leftover Jalapeno Poppers and wasn't sure what I should do with them. I thought to myself, there is no way they would be the same the next day after sitting in the refrigerator all night. Little did I know they would be so much better! I decided that I wanted to use them inside a street taco since I already had some left over corn tortillas in the fridge. But I had to figure out what else to put inside the taco. I recently discovered a DELICIOUS corn salad recipe... Well I decided to go for it.

My husband really liked the Jalapeno Poppers so I could tell he was a little leery about me making street tacos with them. I always know when he really likes something I fix because he says mmmmmm a lot with a full mouth and makes other interesting sounds. He definitely did this while eating the tacos. These turned out AMAZING! I would make the poppers again only to make the street tacos.

Read below for the details, pretty pictures and printable recipes. I encourage you to at least try the Corn salad. It's a simple dish to make and it could be used as a side or kind of like a salsa. Let me know if you try it!

Corn Salad  (Click the title for printable recipe)

1.) Gather your ingredients: 4 ears of corn, 2 avocados, 2 limes and cilantro, olive oil and salt to taste. If you don't like cilantro then use parsley.



2.) Clean your corn and roast. I chose to roast mine by broiling it. I also love to grill my corn outside! To broil corn just spray a little cooking spray on a broiling pan and add your ears of corn in a row, then place on the top rack in your oven. You should only need to rotate the ears of corn one time, giving them about 5 minutes on each side. Don't forget to leave your oven door open when you broil. Also if your corn turns a little black that's a good thing, it's just more flavor!

3.) When your corn is roasted to your liking let it cool for about 15 minutes. Then cut all the lovely corn kernels off with a sharp knife. I usually do this over a bowl.



4.) Slice both avocados and add to the corn kernels

5.) Add chopped Cilantro and season with salt

6.) Lastly drizzle a little olive oil and squeeze lime juice over the top. This should prevent the avocado from turning brown and adds great flavor. (Tip: if you ever don't want to use a whole avocado just leave the seed in the half you don't use and wrap tightly. It should stay fresh for a couple days!)

7.) Mix the salad gently to incorporate the flavors.



Bacon Wrapped Jalapeno Popper Street Tacos (Click the title for printable recipe)

1.) In order to make 5 street tacos you will need the following ingredients: 5 corn tortillas, 10 bacon wrapped jalapeno poppers, corn salad (recipe above) and lettuce.

2.) Warm up your leftover poppers in the microwave.

3.) Wet a paper towel and wrap around the corn tortillas and heat those up for 1 minute in the microwave; this allows them to be more flexible.

4.) Place your corn tortillia on a plate, then add 2 poppers and on top of that add your corn salad and a little lettuce. Lastly I squeeze a little more lime juice over the top.

Mmmmm....YUMMY!
