Bacon Wrapped Jalapeno Poppers

LOVE to cook. It's something that comes natural to me. I believe everyone that loves to eat can also become a great cook. Some people need a little more practice than others but my advice is to never give up and keep trying because the results of a great dish are so worth it.

Have you ever had Jalapeno Poppers before? In the past I've enjoyed them both fried and grilled. Usually they are made with a cream cheese filling. This is exactly where I'm going to change it up a bit. I'm going to try baking my Poppers and filling them with Pub Cheese instead. Pub Cheese, you ask?  When I was at the grocery store the other day I was lusting over the specialty cheese section, you can usually find it at the front of most stores. Thats when I spotted Pub Cheese. It's an aged cheddar thats soft and spreadable. I thought it would be perfect to use instead of cream cheese. I like to take recipes and change them up a bit. BE BRAVE! You don't have to follow recipes exactly. Think of all the different kinds of cheeses and spreads you could fill a Jalapeno with. The possibilities are endless. STEPS TO MAKING MY LATEST VERSION OF JALAPENO POPPERS (Click the title for printiable recipe)

1.)  Preheat oven to 350 degrees

2.)  Gather your ingredents: 12 jalapenos, 1 container of Pub Cheese, 12 slices of bacon

3.)  Prepare your jalapenos.  Wash and dry them.  Then slice each in half vertically. Take all the heat out by removing the white ribs and seeds. If you like heat you could of course leave a little bit inside, but you want room for all the cheesy goodness.

4.) Fill jalapenos with Pub Cheese.

My favorite way to fill anything is by using a Ziploc bag.
Just put your filling inside and cut off a small section of the corner, then start filling.
 I've used this technique for so many things and the clean up is much easier.

5.) Wrap each jalapeno with 1/2 piece of bacon.

6.)  Place each jalapeno seam side down on a baking rack that's placed on top of a baking sheet with sides.

7.) Cook in a 350 degree oven for about 25 minutes or until bacon is desired crispness
